Autumn is Harvest Time – Grill those veggies!

As autumn approaches, so does garden harvesting of fresh vegetables.

It’s time for you to try some great new items on the grill.  Zucchini, squash, tomatoes, asparagus, potatoes and many other great vegetables can be safely and deliciously prepared on the garden grill quite simply.  If you haven’t tried this before, then give it a go and enjoy tasty accompaniments to your grilled meats.

Wondering what I’m on about?  OK, think of it this way – what are the components of a shish kebab?  Meat, tomatoes, maybe pineapple, onion, peppers, and why not slices of carrot, or chunks of turnip for sweet crunchiness?  But don’t stop at bits on a stick.  Have you ever had barbecued corn on the cob?  It’s delicious.

Buy it on AmazonIt’s recommended to lightly coat the cut up vegetables with a light olive oil, to protect the skin from drying and burning.  Sprinkle the vegetables with your favourite seasonings.  Some great seasonings for veggies are rosemary, parsley, garlic, oil and vinegar salad dressing, black pepper, salt, basil, thyme and the list goes on.  Remember you can create some tantalising and mysterious flavour cocktails with “exotic” smoke chips such as liquorice root or cinnamon bark.  Add a sharp tangy hint with lemongrass chips or lemon, lime, or orange peel as smoke chip.

A grilling wok or a shaker basket makes it easy and quick to grill vegetables to perfection.  apart from anything else, when you use those, the pieces don’t fall through the grate into the fire!

Try this one:

  • 1 zucchini – sliced into disks
  • 1 yellow squash – sliced into disks
  • 1 small red onion – sliced into disks
    • Coat with a spicy oil and vinegar salad dressing.
    • Sprinkle lightly with thyme, basil and fresh black pepper.
    • Place in a wok or shaker basket over a medium-hot charcoal/gas fire, and grill until tender.
    • Remove, place on a light salad bed.
    • Add chicken quarters.

Sit down.  Eat.
